CHOCOLATE COOKIE SALAMI

This old-fashioned chocolate cookie salami is a simple no-bake dessert made by folding crushed cookies and nuts into a rich cocoa-butter mixture, then shaping it into a log and chilling until firm enough to slice.

- 300 gplain tea biscuits or simple cookies, crushed

- 1 cupsugar
- 1 largeegg
- 1 tbspunsweetened cocoa powder

Crush the cookies into small pieces or coarse crumbs and chop the nuts

In a saucepan, combine the butter, sugar, egg, and cocoa powder

Heat gently, stirring constantly, until the mixture comes to a boil; remove from the heat and let it cool slightly

Stir the crushed cookies, chopped nuts, and vodka into the chocolate mixture until evenly combined

Shape the mixture into a compact log resembling a salami and wrap it tightly in parchment paper or plastic wrap

NOTES
Translated and adapted from a handwritten family recipe dated January 1978. The original recipe gives 300 g cookies, 200 g butter, 1 cup sugar, 1 egg, 1 tbsp cocoa, nuts without a specified quantity, and 1 tbsp vodka. Because the amount of nuts was not specified, add them to taste.
