MARINATED CHAMPIGNONS
A quick Eastern European inspired mushroom appetizer marinated with apple cider vinegar, garlic, peppercorns, and bay leaves

These marinated champignons are a simple cold mushroom appetizer made by briefly simmering fresh mushrooms with apple cider vinegar, vegetable oil, garlic, peppercorns, bay leaves, salt, and sugar. After only 5 minutes of cooking, the mushrooms cool in their own marinade and become bright, savory, lightly tangy, and ready to serve chilled.

Mushrooms
- 500 gchampignons
Marinade
- 0.30 cupapple cider vinegar
- ½ cupvegetable oil
- 2 to3 garlic cloves, sliced or minced
- 10 peppercorns
- 1 tspsalt
- 2 tspsugar
- 4 bayleaves
INSTRUCTIONS

Wash the champignons and trim the stems if needed

Place the mushrooms in a saucepan with the apple cider vinegar, vegetable oil, garlic, peppercorns, salt, sugar, and bay leaves

Bring everything to a boil and simmer for 5 minutes, stirring once or twice so the mushrooms are coated in the marinade

Remove from the heat and let the mushrooms cool in the marinade

Transfer the mushrooms and marinade to a jar or covered container

Refrigerate until cold before serving
NOTES
From the handwritten note: slightly more salt and less sugar also works well. Small jars are suitable for storing the mushrooms. Keep refrigerated.
